Crispy Chicken Bites, Korean Inspired

For the Korean Sauce:
50gGochujang Korean paste
350gChefs’ Selections Honey
50mlSoy sauce
50mlRice wine vinegar
50mlLime juice
Method
Prepare the Korean Sauce:
- Combine all sauce ingredients in a saucepan.
- Simmer over medium heat, stirring frequently, until the sauce thickens. Set aside.
Cook the Chicken & Fries:
- Deep fry 8 chicken fillet bites at 180°C for 5–6 minutes, until golden and cooked through.
- Deep fry fries at 180°C for 3–4 minutes until crispy.
Assemble the Loaded Fries:
- Toss the cooked chicken bites in 2 tbsp of the Korean sauce.
- Place fries in a serving bowl.
- Top with saucy chicken bites.
- Garnish with pickled red onions, pickled chillis, chopped spring onions, and a sprinkle of black and white sesame seeds.
Make the Korean sauce in batches and store refrigerated – it keeps well and can be used across multiple dishes for consistent flavour.
