Mexican Loaded Hash Browns
This is comfort food with a fiesta twist. Hash Browns are the crispy foundation for layers of spicy chorizo, zingy salsa, creamy guacamole and a perfectly cooked egg. It’s everything diners love—crunch, heat, richness—stacked in one indulgent dish.

Ingredients
PortionChefs’ Selections hash browns
2 xRipe avocados
Juice of 1Lime
¼ tspChefs’ Selections crushed chilli flakes
1 xRed onion (½ finely diced for guacamole, ½ for salsa)
6 xSalad tomatoes (seeds removed, finely diced)
1 tbspSherry vinegar
4 tbspOlive oil
To tasteFresh coriander (chopped)
PortionChorizo (sliced)
1 xFried egg
For garnishJalapeño peppers (sliced, optional)
Method
Deep-fry Chefs’ Selections hash browns at 180°C for 3–4 minutes, until golden and crispy.
Make the guacamole: mash 2 ripe avocados with juice of 1 lime, ¼ tsp chilli flakes, and ½ red onion (finely diced). Mix well.
Prepare the tomato salsa: combine 6 finely diced, deseeded salad tomatoes with ½ finely diced red onion, 1 tbsp sherry vinegar, 4 tbsp olive oil, and chopped coriander.
Fry sliced chorizo in a hot pan for 2 minutes until slightly crispy and golden.
Fry an egg to your preference.
Plate up the crispy hash browns.
Top with guacamole, tomato salsa, cooked chorizo, and the fried egg.
Garnish with sliced jalapeños and extra coriander if desired.
Layer the toppings strategically – start with guacamole as a base to prevent the hash browns from getting soggy, then add salsa and chorizo before crowning with the fried egg.
